Chocolate Caramel Cookie Bars

Shut. The. Front. Door! These are as good as it gets, better than any chocolate bar out there. The best part?! Vegan, minimal ingredients, no baking, and not full of chemicals and/or sugar. They are a game-changer.

Ingredients
  

Base

  • cup almond flour
  • 1 teaspoon vanilla extract pure
  • 3 tablespoons coconut oil
  • 3 tablespoons natural nut butter peanut, almond for example
  • 3 tablespoons maple syrup
  • pinch salt

Caramel

  • 1 cup Medjool date packed, don't be shy
  • 1 tablespoon peanut butter natural, smooth
  • 1 teaspoon vanilla extract pure
  • 1 tablespoon warm water
  • 5 tablespoon coconut milk
  • pinch salt
  • ¼ cup peanuts chopped

Chocolate coating

  • cup vegan dark chocolate chips
  • 2 tablespoon coconut oil
  • ½ teaspoon vanilla extract pure

Instructions
 

Base

  • Mix all of the ingredients together with your hands (yes, hands!) in a mixing bowl. You want the consistency of dough. If it is too crumbly, add a bit of plant-based milk to get to the texture that you want. Alternatively, if it is too wet, add one teaspoon of almond flour at a time, until you reach the consistency you want.
  • Line an 8x8 baking pan with parchment paper.
  • Press the dough evenly into the pan and place it in the freezer while you make the caramel.

Caramel

  • Place all ingredients, except peanuts, in order into a high speed blender until smooth and creamy.
  • If too thick, add one teaspoon coconut oil at a time until you reach the desired consistency. If the mix is it too thin, add in 1 teaspoon of peanut butter at a time.
  • Add in whole peanuts.
  • Carefully spread the caramel mixture on the cookie base evenly.
  • Return back to the freezer while you make the chocolate coating.

Chocolate coating

  • Heat the chocolate, coconut, and vanilla extract over a double boiler until melted and pour over your cookie/caramel base.
  • Return your pan to the freezer and leave overnight to set.
  • Once the bars have had time to set, cut into pieces.
